The plywood does not sound "factory" to me. My C26 had pleated vinyl covering the hull/deck joints above the fiberglass insert.

The Maude Kay came with a older 10hp 4 stroke Honda with electric start and remote controls. I don't think I would want anything less than a 10 horse for a boat the weight of the C26 even on an inland lake.

The dollar value of anything is pretty much what someone else is willing to pay for it. In a different economy your asking price seems like a fair one, but today, $1500 might be the best offer you'll get.

My biggest concern would be going against a head wind, 10mph and more. The trolling motor will get the boat moving in calm conditions and you can probably make you 4 miles on a single charge with large enough battery but going against the wind will be a different story.

I don't know how much speed you might gain but saving the sail from chaffing on the rail makes sense. I've been thinking of doing the same on REDUX with my furling genoa. I need to raise mine about 1 ft of the drum to get the sail clear of the rail when fully deployed.
