Congrats on your Mutt!
As far as parts go, I can't help you with a hatch cover.
Your main sail though, assuming it is original it is very likely stretched.
Make sure you have the sail raised all the way up the mast is about all you can do there. Maybe one of the Mutineer owners can chime in as to how low the boom "should" be! I've never sailed on one!
Lastly you ask about furling jib. Pretty basic questions to answer first. Do you wish to race your Mutt? If so, no furling. To much wait up front and not terribly efficient, hard for head sail changes. If you do not race, furling is wonderfull! You can put the sail away in seconds flat! You can put portions of the sail away in blustery conditions! Furling is very convenient and wonderful for the casual sailor. Some practice using it properly is in order but in my book they are well worth it!
